Reference producers for building a quality Burgundy cellar without access to DRC: Armand Rousseau, Coche-Dury, Leflaive, Leroy, Méo-Camuzet, Trapet. Excellent, at prices still «reasonable» compared with Romanée-Conti.

Barolo and Brunello — Italian Excellence

Barolo: Piedmont’s «King of wines», made from Nebbiolo in the Langhe. Champagne — The Luxury of Celebration

Champagne is an essential part of a UHNW cellar. The prestige cuvées of the great Houses are luxury objects in every sense:

Krug: The House that raised champagne to the rank of great wine. Krug Grande Cuvée is the reference multi-vintage. Krug Clos du Mesnil (single-plot blanc de blancs) and Clos d’Ambonnay (pure Pinot Noir) are among the rarest champagnes in the world.

Dom Pérignon: The most iconic brand worldwide. The regular vintage DP is the entry point. The Plénitudes (P2 and P3, with very long ageing on the lees) are the most extraordinary tasting expressions that Moët & Chandon produces.

Salon: Made only in exceptional years, only as a blanc de blancs from Chardonnay, only from Le Mesnil-sur-Oger. The opposite of industrial. One of the rarest champagnes in the world.

How to Build a Cellar for a Luxury Villa

The cellar of a UHNW villa is not built in a day — it is built over time, with method. A few guidelines:

The physical structure: A quality cellar needs a constant temperature (12–14°C), 70–75% humidity, no vibration and no UV light, and cork-sealed bottles stored horizontally. The reference climate-controlled cabinets for homes are EuroCave and Liebherr; larger cellars are designed with specialist installers.

The structure of the selection: A balanced cellar for a UHNW villa includes wines for ageing (Bordeaux, Barolo, Brunello — 20–30% of the cellar), wines ready to drink (Burgundy, quality whites, champagne — 50–60%), and fine spirits (single malt whisky, premium rum — 10–20%).

The budget: It depends on the number of bottles, the producers and the vintages chosen. The best approach is to start with a core of bottles for drinking and add collectible bottles over time, with the advice of a trusted merchant or sommelier.

How do you start building a collector's cellar?

The starting point is to define the goal: buying to drink, to collect, or both. For collecting, cases of great-vintage Bordeaux Premier Grand Cru Classé bought en primeur (before bottling) have historically been the most liquid choice. Wine-Searcher, Wine Lister and Jancis Robinson’s Purple Pages are among the most authoritative resources for analysis.

For bottles of significant value, the best storage is a certified professional facility (bonded warehouse in the UK, controlled temperature and humidity, insurance included). Great bottles stored without documented provenance and conditions lose much of their resale value.

It depends on the goal: a first core of quality bottles from reference Italian and Burgundian producers, plus a few Bordeaux Cru Classé and prestige champagnes, can be built gradually. Serious collecting needs a much larger budget and the advice of a specialist merchant.
